ONCE UPON A TIME...

began with two young Frenchmen, Jean Ganizate and Paul Loiseleur, who shared a common passion. In 2012, during an internship in New York, these high school friends discovered Texas barbecue, and it was a true culinary revelation!

After travelling around Texas in 2013 to meet the best chefs, they met Jeffrey howard, the pitmaster of the famous Pecan Lodge, and guess what? They managed to convince him leave his roots behind and come to Paris to embark on the MELT adventure!

 

In November 2016, the team set up their headquarters in the 11th arrondissement of Paris, at 74 rue de la Folie-Méricourt. Their mission? to offer their customers an authentic culinary journey to the heart of texas and the southern United States. 

 

After igniting the streets of Oberkampf for a year, the MELT family decided to conquer western Paris in December 2017. They found their second home in the trendy Batignolles neighbourhood, at 83 rue Legendre, and of course, a new restaurant means a new menu and fresh new barbecue recipes.

 

While keeping the traditional Texas oak wood cooking technique, MELT managed to incorporate flavours from all over the world. To ensure quality, Alexander Smith, a barbecue expert from New York (formerly at Mighty Quinn's Surf BBQ and Hometown Bar-B-Que), supervises the creation of the dishes.
